A New Favorite Recipe: Banana Muffins

A couple weeks ago, I stumbled upon this recipes on www.allrecipes.com. After I made it I knew I had to post it because of how good it was! It was something on first glance, I knew my boys would eat them and I could use them for many meals and perhaps freeze.

Banana Muffins



Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup vegetable oil
  • 1/2 cup plain yogurt (any flavor yogurt works... I used strawberry banana or vanilla).
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas
  • 3/4 cup semisweet chocolate chips ( I omitted these)

Directions

  1. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In another bowl, combine the egg, oil, yogurt and vanilla. Stir into dry ingredients just until moistened. Fold in bananas and chocolate chips. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 22-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
These muffins come out so fluffy and soft and stay good forever! Plus they are toddler friendly too! Typically, my husband doesn't eat a lot of the banana bread that I make but these; he was asking me every day if he could have one of the "boy's" muffins for breakfast!
